Oolong Tea
Oolong tea is a partially oxidized tea. The leaves are bruised and shaken to oxidize just their edges, then pan-fired, rolled and dried, often leaving them green at the center with reddish rims. Oolong is known for its rich, lingering floral and fruity aroma and a long sweet finish, and it holds up beautifully to many infusions. Styles range from light and fragrant to deep and roasted. Classic examples include Tieguanyin, Da Hong Pao, Phoenix Dan Cong and Dong Ding.
