Dark Tea
Dark tea is a post-fermented tea. Its key step is wet piling, where the leaves slowly ferment and mature. It brews a deep reddish-brown cup with a rich, earthy, aged aroma and a smooth, mellow taste. It is wonderful simmered on the stove and makes a soothing cup after a hearty meal. Classic examples include ripe Pu-erh, Anhua dark tea, Liu Bao and Fu brick tea. In China, ripe Pu-erh is officially classified as a dark tea.
